Gastronomy and, in particular, ethnic cuisine is synonymous with cultural identity. On the basis of an informative picture of the current situation in the food sector, it is evident that the art of eating well, defines the level of welfare and quality of life in a community. It also true, however, that the prerogative of a given community knows no boundaries, whether geographical or cultural, undoubtedly representing a synergy between peoples and countries in a globalized world.Downloads
